July 1th, 2010 | The new Barcelona restaurants: Dos cielos

I'm a huge fan of the Torres twins, Sergio and Javier, and their restaurant on the 24th floor of the Barcelona ME hotel with its integrated kitchen-dining room. The (identical) twins are modern cooks but hark back to the traditional certainties of their Catalan upbringing. Among my top 10 Torres creations are the raviolo of foie gras with black olives, dried tomatoes and chives; the grouper cooked with salt and rosemary; and the oyster with cow heel and cucumber (improbably but absolutely delicious). Make sure you try the cheeseboard, wine list and the breads, which are long-fermented and home-baked.
